  • Season beefsteaks with salt and pepper and let rest for 5 minutes.
  • In a saucepan or deep skillet over medium heat, heat oil and cook onion for 10 minutes or until caramelized or until brown. Add beefsteaks, season with salt and pepper, and cook for 15 minutes or until cooked through and tender.
  • For the salsa martajada: On a griddle over high heat, roast tomatoes, onion, garlic, and serrano chiles. Set aside.
  • In a molcajete, crush coarse salt, cumin, and pepper. Add roasted onion, garlic, and serrano chile and keep crushing until a purée is obtained. Add tomatoes and chipotle chile in adobo sauce. Crush until incorporated and add chopped cilantro. Mix and set aside.
  • Serve steak & onions with salsa martajada, tortillas, and plenty of lime.
