  • Slice Jalapeños lengthwise. Trim, seed, and set aside.
  • In a saucepan with plenty of hot water, pour white vinegar and cook Jalapeños for 15 minutes. Drain and set aside.
  • For the stuffing: In a hot saucepan, fry chorizo and sweat onion. Add pinto beans, chicken broth, and cilantro. Season with cumin, salt, and pepper. Cook for 6 minutes. Let cool.
  • Preheat oven to 392 °F.
  • Stuff Jalapeño chiles with bean and chorizo mixture. Place a bit of Oaxaca cheese on top and bake for 10 minutes or until cheese melts.
  • Garnish bean & chorizo Jalapeño poppers with avocado and cilantro.
