  • some vegetable oil
  • 1 onion, medium-sized, 7 oz
  • 1 clove garlic, finely chopped
  • 1 1/2 cups Poblano chile strips
  • 1 sprig celery, finely chopped
  • 3 cups shrimp, cleaned, peeled, and deveined, 1.1 lbs
  • salt
  • pepper
  • 10 corn tortillas
  • 2 cups Manchego cheese, shredded
  • green salsa, for serving

  • In a skillet over medium heat, pour a dash of oil and fry onion, garlic, and celery for 3 minutes. Add Poblano chile strips and cook for 5 more minutes.
  • Add shrimp and season with salt and pepper. Cook for 5 more minutes until shrimp turn color. Remove from heat.
  • On a griddle or skillet over low heat, heat tortillas. Add cheese and melt for 2 minutes. Add shrimp mixture, fold tacos, and remove from heat.
  • Serve easy tacos gobernador warm with the salsa of your choice.
