  • 36 pulparindos
  • 1 cup chile powder
  • 1 cup cucumber, cut into cubes
  • 1 cup carrot, shredded
  • 1 cup cracker nuts
  • 1 cup spicy gummies
  • 1 cup jicama, cut into cubes
  • 1 cup chamoy
  • 1 cup lime, for serving
  • 1 cup hot sauce, for serving

  • For the tortilla, place pulparindos in a glass bowl. Heat in the microwave for 20 seconds or until soft. Do not overheat the pulparindos, otherwise they might end up caramelized.
  • On a chopping board with plastic wrap, roll pulparindos using a rolling pin. Cut pulparindo tortillas with a cutter. Coat with chile powder. Set aside.
  • Arrange tortillas into a ring form. Stuff with cucumber, carrot, cracker nuts, spicy gummies, and jicama. Serve pulparindo tacos with chamoy, lime, and hot sauce.
