Sweet Tamal Bundt Cake

  • 1 cup butter, for the tamal dough
  • 3/4 cups sugar, for the tamal dough
  • 2 cups masa mix for tamales, for the tamal dough
  • 1 teaspoon baking powder, for the tamal dough
  • 1 cup water, for the tamal dough
  • some food coloring, pink
  • 2 cups cream cheese
  • 1 cup blackberry jam
  • 1 cup canned pineapple, cut into cubes
  • some blackberries, for garnish

  • Beat butter and sugar until soft. Little by little add flour and baking powder. Little by little add water and pink food coloring. Beat to a homogenous dough.
  • Soften cream cheese using a spatula. Place it in a piping bag. Set aside.
  • Pour half of the tamal dough into a previously greased and floured bundt cake pan. Spread well. Using a spoon, make a dent in the middle of the dough. Add cream cheese, blackberry jam, and pineapple. Cover with remaining dough.
  • Cover pan with aluminum foil. Cook in a water bath on the stove for about 1 hour or until cooked through. Cool slightly and unmold.
  • Unmold sweet tamal bundt cake and garnish with cream cheese and blackberries. Cut a slice.
