  • 800 grams masa harina
  • 300 milliliters chicken broth
  • 100 grams vegetable shortening
  • 300 grams lard
  • 600 grams chicken, thighs and drumsticks
  • 15 grams salt

  • Soak corn husks in hot water.
  • Cream lard and shortening.
  • Mix flour, salt, and cold chicken broth.
  • Add masa to lard and shortening mixture little by little.
  • Cook and shred chicken.
  • For the green sauce: Roast tomatoes, garlic, onion, and serrano chiles. Transfer ingredients to a blender and blend until smooth.
  • For assembling the tamales: Spread a bit of tamal dough in each corn husk and stuff with shredded chicken and green sauce. Arrange traditional tamales verdes in a steamer and steam for 50 to 60 minutes or until cooked through.
