Al Pastor Turkey

Turkey is, for sure, the undisputed centerpiece at any Christmas dinner. How about spicing it up with a bit of Mexican flavor? Marinated in an irresistible al pastor sauce prepared with ancho and guajillo chile, achiote, pineapple juice, and a unique blend of spices, this al pastor turkey will be a total showstopper at your holiday feast!

  • 1 cup bacon, finely chopped, for the stuffing
  • 4 tablespoons garlic, finely chopped, for the stuffing
  • 1/2 cups onion, finely chopped, for the stuffing
  • 1 kilo ground pork
  • 2 cups canned pineapple, cut into medium-sized cubes, for the stuffing
  • 1/4 cups fresh cilantro, finely chopped, for the stuffing

  • 1 tablespoon clove powder, for the stuffing
  • 1 cup canned pineapple syrup, for the stuffing

  • 1 turkey, clean, without giblets, 13.2 to 17.6 oz
  • 1/2 pineapples, cut into half-moons

  • Preheat oven to 482 °F.
  • For the al pastor marinade: Combine all ingredients for the al pastor marinade in a blender and blend to a smooth adobo. Place turkey on a baking sheet and marinate for 3 to 4 hours, spooning marinade over occasionally.
  • For the stuffing: In a skillet over high heat, cook bacon until fat is rendered out. Add garlic, onion, and meat and cook for 10 minutes. Add pineapple, cilantro, cumin, clove, and canned pineapple syrup and season with salt and pepper.
  • Remove turkey from the fridge and stuff with previous preparation. Truss the legs with kitchen twine. Using a brush, brush turkey with more al pastor sauce. Cover with aluminum foil and bake for 30 minutes. Remove aluminum foil and bake for 2 hours and a half or until turkey is cooked through and the skin is golden-brown.
  • On a grill over high heat, grill pineapple until golden-brown. Set aside.
  • Serve al pastor turkey garnished with grilled pineapple, onion rings, and cilantro leaves.
