Clean your fridge out of leftover turkey with these quick and easy cranberry turkey sandwiches! Loaded with a sweet and tart cranberry jam, these tasty sandwiches star leftover turkey topped with arugula to seal the deal!

  • 8 slices sandwich bread, or artisan
  • 1 cup cranberry jam
  • 500 grams roast turkey, or smoked turkey, sliced
  • 1 cup arugula, lettuce

  • Slightly toast sandwich bread.
  • Meanwhile, heat turkey whether in the microwave or the oven.
  • For assembling the sandwiches: Spread 4 slices of bread with cranberry jam. Place leftover turkey and arugula on top. Top with remaining slices of bread.
  • Cut cranberry turkey sandwiches in half and serve.
