Easy Turkey with Gravy

  • 1 lime
  • 1 onion
  • 6 sprigs rosemary
  • 6 sprigs sage
  • 6 sprigs oregano
  • 7 tablespoons unsalted butter
  • 2 tablespoons herbes de Provence
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 6 cups chicken broth
  • 1/3 cups flour

  • Preheat oven to 392° F.
  • Remove giblets and rinse turkey. Pat dry with paper towels.
  • Slice oranges, limes, and onion and place them inside the turkey. Add rosemary, sage, and oregano, 2 sprigs each.
  • Truss turkey legs with kitchen twine.
  • In a pot, mix 2 tablespoons of butter, herbes de Provence, oil, 1 ½ teaspoon of salt, and 1 ½ teaspoon of pepper until butter melts. Stir thoroughly.
  • Place turkey in a roasting pan and spread turkey with melted butter. If possible, spread butter in between the skin and the meat of the turkey with your hands.
  • Cover turkey with aluminum foil and bake for 20 minutes.
  • Add 3 cups of chicken broth to the roasting pan and the remaining fresh herbs. Bake turkey for 40 more minutes.
  • Lower heat to 356 °F and remove aluminum foil. Add 1 cup of chicken broth to the roasting pan.
  • Keep baking turkey for 1 hour and a half. Bathe turkey in its own drippings every 15 to 20 minutes. The turkey will be done once a thermometer inserted in the meatiest part of the leg reads 165 °F or 73.8 °C.
  • Remove turkey from oven and tent with aluminum foil while the gravy is ready.
  • For the gravy: Strain all the drippings left in the roasting pan. Discard solids.
  • After some minutes, once the fat from the turkey has separated, skim off fat from turkey drippings with a spoon.
  • Add plenty of chicken broth until there is a total of 4 cups of liquid, including the turkey drippings.
  • In a pot, melt 5 tablespoons of butter over medium heat. Add flour and stir constantly with a whisk for 1 minute. Little by little, add liquid and keep stirring until gravy thickens. Season with salt and pepper.
  • Serve easy turkey with gravy.
