  • Preheat oven to 392 °F.
  • Heat a skillet over medium heat. Cook bacon until golden brown and until it renders fat out. Fry garlic, onion, and leek in the fat rendered out by bacon and cook until bright and translucent. Add ground pork and ground beef and cook for some minutes. Season with nutmeg, cumin, and thyme.
  • Add apples, raisins, cranberries, and almonds. Pour in wine and pineapple juice. Add bay leaf. Season with salt and pepper and cook until liquids evaporate. Set aside.
  • On a chopping board place turkey breast. Add stuffing, roll up, and truss with kitchen twine to help it hold its shape. Set aside.
  • Place turkey roll in a baking sheet and bake for 40 minutes or until cooked through. Set aside.
  • For the cranberry sauce: Combine cream cheese, goat cheese, garlic, onion, milk, cream, pecans, cranberries, salt, and pepper in a blender and blend to a sauce.
  • In a pot or deep skillet, melt butter and pour in sauce. Bring to a boil and lower heat. Cook for 10 minutes or until thickened.
  • Remove turkey roll from oven. Cut turkey roll into slices on a chopping board. Serve stuffed turkey roll on a plate with salad and spoon over cranberry sauce.
