  • 2 tablespoons vegetable oil
  • 4 cups green salsa, cooked, blended, and seasoned
  • 3 sprigs fresh epazote
  • 500 grams tortilla chips, for the green chilaquiles
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 can black beans, refried, 1.1 pounds
  • 100 grams Cotija cheese, shredded
  • 1/2 onions, cut into round slices
  • 3 tablespoons fresh cilantro, finely chopped

  • Heat oil in a large pot over medium heat. Add green sauce and stir thoroughly.
  • Add epazote and cook for 5 minutes. Set 1 cup of green sauce aside.
  • Add tortilla chips, salt, and pepper to the sauce. Cook for 10 minutes until tortillas soften.
  • Pour chilaquiles into a large tube pan. Press slightly. Spread beans with a spoon to make the base.
  • Unmold on a large tray. Spoon over the reserved cup of sauce and top with cream, cheese, onion, and cilantro.
  • Top with cream, cheese, onion, and cilantro.
  • Slice green chilaquiles party ring with beans and serve hot.
