  • 1 1/2 kilos tomatillo
  • 1/4 onions
  • 3 serrano chiles
  • 1/2 bunches cilantro
  • 3 allspice berries
  • some salt
  • 3 cups tortilla chips
  • 4 bolillo rolls
  • 1/4 cups butter, spreadable
  • 1 1/2 cups refried beans
  • 1/2 cups sour cream
  • 1 cup Manchego cheese, sliced
  • some red onion, cut into thin strips, for garnish
  • some cilantro leaves, for garnish
  • some avocado, sliced, to decorate

  • For the chilaquiles: In a pot with water, boil onion and chiles for 10 minutes or until they turn color. Transfer to a blender, add cilantro, allspice berries, and salt, and blend until smooth.
  • In a saucepan with a dash of oil, fry sauce and add tortilla chips. Set aside.
  • For the molletes: On a chopping board, cut bolillos in half and remove the crumb. Spread butter and refried beans on each bolillo half.
  • Place molletes in a baking dish and place chilaquiles, cream, and Manchego cheese on top. Bake for 10 minutes or until cheese broils.
  • Garnish molletes with chilaquiles casserole with red onion, cilantro, and avocado.
