Pizza Quesadilla

  • 1 cup tomato purée, for the tomato sauce

  • 4 burrito-sized flour tortillas, burrito-sized
  • 1 cup Mozzarella cheese, shredded
  • 1 cup deli ham, cut into cubes
  • 1 cup pineapple, cut into cubes
  • 1 cup red chile, blistered, for the red salsa
  • 2 guajillo chiles, trimmed, seeded, and rehydrated, for the red salsa
  • 1/4 cups white vinegar, for the red salsa
  • 1 árbol chile, for the red salsa
  • 2 cloves garlic, for the red salsa

  • In a bowl, combine tomato purée, oregano, basil, thyme, onion powder, garlic powder, salt, and pepper. Mix until perfectly incorporated.
  • On a chopping board, spread a bed of tomato sauce on a burrito tortilla. Add Mozzarella cheese, ham, and pineapple. Place a burrito tortilla on top.
  • On a griddle, cook pizza quesadilla until golden brown and until the cheese melts.
  • For the red salsa: In a blender, combine all the salsa ingredients and blend until smooth. Set aside.
  • Serve pizza quesadilla on a wooden pizza plate and cut into slices.
