Quick Green Chilaquiles

  • In a pot, place peeled tomatillos and serrano chiles. Cover with water and heat over low heat.
  • Transfer ingredients and 1/3 of the cooking water to a blender and blend to a sauce.
  • Pour sauce into a large pot, season with salt, and cook over medium heat for about 5 minutes until slightly reduced giving the flavors time to meld. Keep warm.
  • In a large skillet, place about 0.3 inches of oil. Fry half of the tortilla triangles for about 3 minutes until slightly brown.
  • Repeat previous step with leftover tortillas.
  • Drain fried tortilla triangles on a paper towel-lined plate to remove excess oil.
  • Remove ¾ of oil from the skillet and place tortilla triangles back in.
  • Add onion and cover. Let cook for about 4 minutes until translucent. Stir constantly making sure the ingredients do not stick or burn.
  • Pour in sauce and cook for 3 more minutes stirring constantly.
  • Serve quick green chilaquiles topped with cream, queso fresco, and chopped cilantro.
