  • 1/2 cups mayonnaise, for the bacon shrimp crackers
  • 2 tablespoons chipotle chile, ground, for the bacon shrimp crackers

  • 1/3 cups bacon, for the bacon shrimp crackers

  • For the smoked salmon bites: In a food processor, grind smoked salmon, cream cheese, whipping cream, lime juice, and dill. Season with salt and pepper.
  • Place mixture in a piping bag with a drop flower nozzle and serve on top of saltine crackers. Garnish with fresh dill.
  • For the tuna salad crackers: In a bowl mix tuna, cream cheese, serrano chile, onion, garlic powder, salt, and pepper. Serve on top of saltine crackers and garnish with an olive.
  • For the Christmas tree cheese crackers: Cut panela cheese into cracker-sized triangles. Cut serrano ham into thin strips. Cut bell pepper into small stars.
  • Place panela cheese triangle on top of a cracker. Garnish with serrano ham thin strips, bell pepper stars, and parsley.
  • For the Brie and orange jam crackers: Mix orange jam and rosemary. Season with salt and pepper. Cut Brie cheese into thin slices.
  • Spread a bit of jam on each cracker and top with a slice of Brie cheese.
  • For the salami cream cheese bites: In a bowl, mix cream cheese, bacon, and chives and season.
  • On a chopping board, place plastic wrap and arrange salami slightly overlapping. Spread cream cheese dip. Roll using the plastic wrap. Refrigerate until firm.
  • Cut into 0.3-inch-thick rolls and place on top of saltine crackers.
  • For the bacon shrimp crackers: Mix mayonnaise and chipotle chile. Set aside.
  • In a skillet over medium heat, fry bacon. Add shrimp and cook for 3 more minutes.
  • Spread a bit of chipotle mayo on a cracker. Top with shrimp and garnish with finely chopped cilantro.
  • Serve 6 fancy appetizers on a serving platter.
