  • 1 tablespoon salt
  • 4 potatoes, peeled and cut into chunks
  • 1/2 cups bacon, fried and finely chopped
  • 1 tablespoon chives
  • 1 tablespoon oregano
  • 1/4 cups Parmesan cheese, shredded 
  • 1 tablespoon cow's milk
  • some salt
  • some pepper
  • 1 cup Mozzarella cheese, cut into medium-sized cubes
  • some flour, for breading
  • some egg, beaten, for breading
  • some breadcrumbs, for breading
  • some vegetable oil, for frying

  • In a small pot with boiling water, add potatoes and salt and cook until soft. Drain and let cool.
  • In a bowl, mash cooked potatoes with a fork to a purée. Add bacon, chives, oregano, Parmesan cheese, and milk and mix thoroughly. Season with salt and pepper.
  • Form croquettes with your hands and add a Mozzarella cube in the center.
  • Coat croquettes in flour, beaten egg, and breadcrumbs. Fry croquettes in hot oil until golden brown. Transfer to a paper towel-lined plate to remove excess oil.
  • Serve bacon and cheese potato croquettes warm.
