  • On a chopping board, cut carrots and potatoes into small-sized cubes.
  • In a small pot with water over medium heat, cook carrots for 10 minutes. Drain. Cool and reserve.

  • For assembling the easy Olivier salad: In a bowl, mix all cooked ingredients, onion, mayonnaise, and parsley. Season.
