  • some vegetable oil
  • 6 nopales
  • 4 Habanero chiles
  • 1 cup black beans, cooked, drained 
  • 1 cup tomato, finely chopped
  • 1 cup red onion, finely chopped
  • 1 cup cucumber, cut into small-sized cubes
  • 1/2 cups radish
  • 1/4 cups epazote, finely chopped
  • 1/4 cups lime juice
  • 1/4 cups olive oil
  • 2 tablespoons vinegar
  • salt
  • some double cream cheese, for garnish 
  • some pork rinds, for serving 
  • some tortilla chips, for serving

  • Heat a grill and brush it with oil. On the grill, char nopales and Habanero chiles on both sides. On a chopping board, cut nopales into chunks and finely chop Habanero chiles. Set aside.
  • In a bowl, mix black beans, tomato, red onion, cucumber, radish, epazote, nopales, Habanero chiles, lime juice, olive oil, and vinegar. Season with salt.
  • Serve grilled nopal salad with tortilla chips and pork rinds.
