Guacamole-Stuffed Onion Rings

  • 2 avocados, for the guacamole
  • 1/3 cups lime juice, for the guacamole
  • 1/4 cups fresh cilantro, finely chopped, for the guacamole 
  • 1/4 cups tomato, cut into small-sized cubes, for the guacamole
  • 1/4 cups bacon, fried, finely chopped, for the guacamole 
  • 1 tablespoon garlic powder, for the guacamole
  • 1 pinch salt and pepper, for the guacamole
  • 2 white onions, cut into thick rings
  • 1 cup flour, for the batter
  • 2 eggs
  • 1 cup panko, for the batter
  • 1 cup vegetable oil, for frying
  • sour cream
  • lime, for serving

  • In a bowl, combine all the guacamole ingredients. Season with salt and pepper. Set aside in the fridge.
  • On a greased baking sheet, place onion rings and stuff with guacamole. Keep in the fridge for about 1.5 hours until the center is firm.
  • Coat stuffed onion rings with flour and dip them in egg. Bread stuffed onion rings with panko. Set aside.
  • In a deep pot, heat oil and fry coated onion rings. Drain on a paper towel-lined plate to remove excess oil. Serve guacamole-stuffed onion rings on a plate.
