  • In a small pot with water over medium heat, cook potatoes for 25 minutes or until soft. Drain, let cool, and set aside.
  • On a chopping board, peel potatoes. Transfer potatoes to a bowl and mash with a potato masher until a doughy consistency is obtained. Add butter and season with salt and pepper. Add cornstarch, deli ham, egg, and mix thoroughly. Form fritters using a spoon and set aside.
  • In a skillet over low heat, heat oil and cook potato ham fritters until golden brown. Drain on a paper towel-lined plate to remove excess oil.
  • Serve ham and potato cakes with lettuce salad on the side.
