Ham & Cheese Stuffed Potatoes

These decadent stuffed potatoes are stuffed with ham and bacon and broiled with Manchego cheese for an unbeatable side dish no one will resist!

  • 3 potatoes, large
  • 1/4 cups butter
  • coarse salt
  • 1 cup bacon, cut into small-sized cubes
  • 1 cup deli ham, cut into small-sized cubes
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 190 grams cream cheese, 1 package
  • 1 tablespoon parsley
  • salt and pepper
  • 1 cup Manchego cheese, shredded

  • Preheat oven to 356 °F.
  • Place potatoes in aluminum foil. Add butter and coarse salt. Wrap and bake for 40 minutes.
  • Place potatoes on a chopping board. Cut the top part. Using a spoon, hollow out the potatoes. Set the flesh aside.
  • In a skillet over medium heat, fry bacon. Add ham, onion, garlic, potato flesh, cream cheese, and parsley. Cook for 5 minutes. Season with salt and pepper.
  • Stuff potatoes with previous preparation and top with Manchego cheese. Bake for 10 minutes or until cheese broils.
  • Garnish with parsley. Serve ham and cheese-stuffed potatoes hot.
