  • 3 nopales, cut into thin strips
  • 1/3 cups coarse salt
  • 1/4 red onions, sliced
  • 1/2 cups beans, cooked, strained
  • 1/4 cups fresh cilantro, finely chopped
  • 1 cup tomato, cut into small-sized cubes
  • 1 pinch oregano
  • 1/2 avocados, cut into wedges, for garnish

  • For the vinaigrette: Combine lime juice, garlic, honey, salt, and pepper in a blender and blend until smooth. Slowly pour in olive oil in a steady stream.
  • For the salad: In a bowl, mix nopales with sea salt. Using your hands, rub until nopales have obtained a soft consistency and turn bright green. Rinse to remove nopal sap and excess salt. Drain well.
  • Mix nopales, red onion, beans, cilantro, tomatoes, oregano, and vinaigrette. Adjust seasoning.
  • Garnish with avocado wedges.
