Huauzontle Fritters with Mole

  • 2 cups huauzontle, trimmed
  • some water
  • some salt
  • 1 cup asadero cheese, shredded
  • some pepper
  • 1 cup mole sauce, paste
  • 3 cups chicken broth
  • 1 Mexican chocolate tablet, 3.1 oz
  • 4 egg whites
  • 4 egg yolks
  • some flour
  • some vegetable oil, for frying
  • some sesame seeds, for garnish

  • In a small pot with salted water, cook huauzontles over medium heat. Drain and set aside.
  • In a bowl, mix huauzontles and cheese and season with salt and pepper. Using your hands, form balls with the mixture and set aside.
  • In a small pot over medium heat, mix mole paste with chicken broth and stir until dissolved. Add Mexican chocolate tablet and keep stirring until thick. Adjust seasoning.
  • In a bowl, whisk egg whites and salt little by little to stiff peaks.
  • Lightly whisk egg yolks and salt. Add egg yolks into the whisked egg whites and whisk until incorporated.
  • Dip huauzontle fritters into the batter. Fry in a skillet with hot oil for 5 minutes or until cooked through. Drain on a paper towel-lined plate to remove excess oil.
  • On a plate, ladle a bit of mole, place huauzontle fritters on top, and spoon more mole over. Garnish huauzontle fritters with mole with sesame seeds.
