  • 1 cauliflower, cut into florets
  • 1 tablespoon olive oil

  • 1/4 cups sesame seeds
  • 4 nori
  • 1 cup red bell pepper, cut into thin strips
  • 1 cup cucumber, cut into thin strips
  • 1 cup avocado, cut into small-sized cubes

  • For the cauliflower rice: In a food processor, add cauliflower and grind for 1 minute. Set aside.
  • In a skillet over medium heat, heat oil and cook cauliflower for 5 minutes. Season with salt and pepper. Let cool and set aside.
  • In a bowl, mix cauliflower, cream cheese, and sesame seeds thoroughly. Set aside.
  • In a bamboo sushi rolling mat, place nori and a bed of cauliflower rice on top. Top with bell pepper, cucumber, and avocado. Roll sushi mat pressing gently.
  • On a chopping board, slice keto sushi rolls. Serve keto sushi rolls on a plate with soy sauce on the side.
