  • 2 1/2 kilos potato, peeled and cut into chunks

  • 6 tablespoons unsalted butter, at room temperature
  • 2 cloves garlic, peeled and chopped
  • 1 1/2 cups whole milk
  • 1/2 cups chives, chopped
  • black pepper, freshly ground

  • Place potatoes in a large pot. Add water until potatoes are covered.
  • Add salt. Bring to a boil over medium heat. Once it simmers, reduce heat and cover. Let cook for about 30 minutes until potatoes are soft.
  • Remove potatoes from water. Set aside half a cup of the cooking water.
  • While potatoes cook, melt 2 tablespoons of butter. Add garlic. Fry until opaque, for 1 or 2 minutes. Do not brown.
  • Place milk in a small pot. Bring milk to a boil over medium-low heat.
  • Place potatoes back on the stove over low heat. Mash potatoes with a potato masher. Add ¾ cup of warm milk, 4 tablespoons of butter, cooked garlic, and chopped chives. Stir.
  • Add remaining milk and a bit of reserved cooking water. Mix to the desired consistency.
  • If needed, add more liquid. Season mashed potatoes with salt and pepper.
