Mexican-Style Zucchini

  • 1/4 cups onion
  • 1 clove garlic, finely chopped
  • 3 cups zucchini, cut into cubes
  • 1 cup tomato, cut into cubes
  • 1/2 cups corn kernels
  • sour cream, for garnish
  • queso fresco, for garnish

  • In a skillet over medium heat, heat oil and cook onion until translucent. Add garlic and zucchini and cook for about 10 minutes-
  • Add tomato and corn kernels and cook for 10 more minutes until cooked through and until zucchini softens.
  • Season with salt and cook for 5 more minutes. Serve garnished with cream and cheese.
