Quick Pickled Red Onions

  • 1 red onion
  • 1 tablespoon salt
  • 1 teaspoon sugar
  • 1 teaspoon pepper, ground
  • 1 teaspoon oregano
  • 1/4 teaspoons ground cumin
  • 4 cloves
  • 3 cloves garlic, peeled, cut into thin strips
  • 1 1/2 cups wine vinegar

  • Peel onion, cut in half, and thinly slice.
  • In a bowl, mix salt, sugar, onion, and add two tablespoons of water. Let sit for about 15 minutes until onion releases a white milky juice
  • Place in a glass jar along with ground pepper, oregano, cumin, cloves, garlic, and white vinegar.
  • Put a lid on and refrigerate for at least 4 to 6 hours before using so the aroma of the spices can be absorbed.
