  • 1/4 cups olive oil, for the vinaigrette
  • 2 tablespoons white vinegar, for the vinaigrette
  • 1 clove garlic, finely chopped, for the vinaigrette
  • 1 pinch salt, for the vinaigrette
  • 1 pinch pepper, for the vinaigrette
  • 1/4 cups red onion, cut into cubes
  • 1/2 cups panela cheese, cut into cubes
  • 1/2 cups cucumber, cut into cubes
  • 1/4 cups heart of palm, cut into round slices
  • 1/2 cups quinoa, cooked
  • 2 tablespoons sunflower seeds
  • 1 cup lettuce, shredded

  • For the vinaigrette: In an airtight glass jar, combine all the vinaigrette ingredients. Set aside.
  • In the glass jar, place a layer of red onion and top with a layer of panela cheese. Add a layer of cucumbers and top with a layer of hearts of palm. Add a layer of quinoa, a layer of sunflower seeds, and top with a layer of lettuce.
  • Close quinoa and panela cheese jar salad and refrigerate.
