Roasted Asparagus Potato Salad

  • 3 cups new potatoes, cut into halves 
  • 1/2 kilos asparagus
  • 1 tablespoon red chile, dried
  • 2 tablespoons thyme
  • 3 tablespoons olive oil
  • some salt
  • some black pepper
  • 1 tablespoon breadcrumbs
  • 3 cups spinach
  • 5 limes, juice
  • some parsley, finely chopped, for garnish

  • In a pot with hot salted water, cook new potatoes for 20 minutes. Cook asparagus for 3 minutes.
  • Place previous ingredients on a baking dish. Add red chile, dried or fresh thyme, olive oil, salt, black pepper, and breadcrumbs.
  • Place baking dish in the oven and bake at 356 ºF for 10 minutes.
  • Once new potatoes and asparagus are golden brown, remove from the oven. Add lime juice.
  • Serve roasted new potatoes, baby spinach, and golden brown asparagus on a plate. Spoon remaining olive oil, lime juice, and fresh parsley from the baking dish over roasted asparagus potato salad.
