  • On a chopping board, cut cherry tomatoes into halves. Set aside.
  • Peel and cut carrots into round slices. Set aside.
  • Drain canned corn kernels and peas. Set aside.
  • Cook mashed potatoes according to the instructions in the package. Do not add too much milk to keep mashed potatoes from turning runny. Set aside.
  • On a plate, arrange ingredients from the largest to the smallest to resemble a rainbow. Arrange a row of cherry tomatoes, carrots, corn kernels, peas, and dried cranberries.
  • Form mashed potato clouds as seen in the picture. Use sesame seeds for the eyes and an olive cut in half for the mouth.
  • For the blush, use small-sized tomato cherry slices or drops of ketchup.
  • Season veggie rainbow snack with salt and pepper.
