  • In a blender, combine guajillo chile, orange juice, achiote paste, garlic, onion, and cumin. Season with salt and pepper.
  • In a bowl, add blended mixture and pork steak. Marinate pork steak for 30 minutes.
  • In a skillet, heat oil over medium heat and cook pork steak until cooked through.
  • In a bowl, mix masa dough and lard. Season with salt. Knead masa dough until ingredients are perfectly incorporated.
  • Form masa dough balls with your hands. Place each masa dough ball between two butcher papers. Using a rolling pin, flatten each masa dough ball to form a huarache.
  • On a griddle, cook huarache over medium heat until both sides are cooked through.
  • Spread a bed of beans on the huarache. Top huarache with al pastor pork steak, pineapple, cilantro, and onion. Serve al pastor huarache with lime and guacamole.
