Authentic Quesadillas de Sesos

  • some vegetable oil
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups tomato, chopped
  • 2 cups pork brains
  • 1/4 cups epazote, chopped
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 12 tortillas
  • some vegetable oil

  • In a pot, heat oil over low heat. Fry onion, garlic, and tomato for 5 minutes. Add pork brains and cook covered for 10 minutes.
  • Add epazote, salt, and pepper and cook for 10 more minutes until all the liquid evaporates. Set aside.
  • Stuff each tortilla with two teaspoons of previous mixture, fold in half, and secure with toothpicks. Set aside.
  • In a pot, heat plenty of oil to fry the quesadillas. Once hot, fry quesadillas for 5 minutes. Remove from oil and drain on a paper towel-lined plate.
  • Serve authentic quesadillas de sesos in a wooden bowl with guacamole on the side.
