In a pot, heat oil over low heat. Fry onion, garlic, and tomato for 5 minutes. Add pork brains and cook covered for 10 minutes.
Add epazote, salt, and pepper and cook for 10 more minutes until all the liquid evaporates. Set aside.
Stuff each tortilla with two teaspoons of previous mixture, fold in half, and secure with toothpicks. Set aside.
In a pot, heat plenty of oil to fry the quesadillas. Once hot, fry quesadillas for 5 minutes. Remove from oil and drain on a paper towel-lined plate.
