  • 1/2 onions, finely chopped
  • 1 cup pressed pork rinds
  • 1/2 kilos masa dough
  • 2 cups lard, for frying 
  • 1/2 cups queso fresco, crumbled 
  • 1/2 cups onion, finely chopped, for serving
  • 1/2 cups fresh cilantro, finely chopped, for serving  
  • green salsa, for serving

  • In a skillet, cook onion over medium heat until softened. Add pressed pork rinds and cook for 10 minutes. Let cool and set aside.
  • Form masa dough balls, hollow out, and stuff with pressed pork rinds. Flatten masa dough to a 3.1-inch circle to form a gordita.
  • In a small pot, heat lard and fry gorditas until golden brown. Remove from oil and drain on a paper towel-lined plate.
  • Using a knife, cut open gorditas along the edge and garnish with cheese, onion, and cilantro. Serve homemade chicharrón prensado gorditas with green salsa.
