  • For the mole sauce: In a blender, combine rehydrated chiles and water and blend to a paste. Set aside.
  • In a pot over medium heat, heat mole paste, chile paste, and chicken broth for 5 minutes until dissolved. Add chopped Mexican chocolate, season, and cook for 10 more minutes. Set aside.
  • For the huarache: Mix masa dough, lard, and salt until smooth and pliable. Ball a portion of masa dough and form a huarache. On a griddle, cook huarache on both sides for 10 minutes, remove, and set aside.
  • For the pork ribs: Season pork ribs with salt and pepper. In a skillet, heat oil and cook pork ribs for 8 minutes.
  • For assembling the huarache: Spread refried beans on each huarache. Place pork ribs on top and spoon mole sauce over. Serve mole rib huarache topped with cream, cheese, and salsa.
