  • In a deep pot, cook pig’s feet, cow’s feet, and tripe. Add water to cover three fingers above the meat. Add onion, garlic, and a bit of salt. Cook meat for about 2.5 hours over medium heat or until soft.
  • Meanwhile, combine tomatoes, guajillo chile, ancho chile, cumin, oregano, and a bit of salt in a blender and blend until smooth.
  • Add sauce to the meat. Cook for 20 more minutes until flavors incorporate. Remove from heat.
  • Serve authentic Mexican menudo with onion, cilantro, lime, and tortillas.
