Authentic Mole Chichilo

The Mexican state of Oaxaca is renowned for its mastery in moles, delicate and complex sauces prepared with seeds, chiles, and several other ingredients. Authentic mole chichilo is a dark mole whose color is obtained from charring some of its ingredients, like black chilhuacle chile and avocado leaves. Slightly bitter and mildly spicy, authentic mole chichilo is traditionally served with beef.

  • 1/2 onions
  • 2 cloves garlic
  • 2 tomatoes
  • 3 tomatillos
  • 3 ancho chiles
  • 4 black chilhuacle chiles
  • 5 tortillas
  • 3 avocado leaves
  • 1 teaspoon cumin
  • 3 pepper
  • 3 cups beef broth
  • some chayote, steamed, for serving
  • some green beans, steamed, for serving
  • some new potatoes, cooked, for serving
  • some beef, for serving
  • some onion, sliced

  • Char onion, garlic, tomato, tomatillo, ancho chile, chilhuacle chile, tortillas, avocado leaves, cumin, and pepper.
  • Transfer charred ingredients to a blender. Add beef broth. Blend until smooth.
  • Cook preparation for about 20 minutes until mole is thick and concentrated. Season with salt.
  • Serve mole with beef, chayote, green beans, and new potatoes. Garnish authentic mole chichilo with sliced onions.
