  • In a large pot over medium heat, heat water. Add onion, garlic beef shank, bone marrow, cilantro, and salt and cook for 1 hour or until meat is almost cooked through.
  • Add corn, potato, carrot, chayote, and green beans and cook for 10 minutes. Add zucchini and spearmint and cook until cooked through. Top authentic puchero with serrano chile round slices and serve with warm tortillas.
