  • 1 cup carrot, peeled, blanched, and cut into round slices, for the pickled Jalapeños
  • 1/4 cups pickled Jalapeño chiles, with brine, for the pickled Jalapeños
  • 1 pinch salt, for the pickled Jalapeños
  • 1 pinch pepper, for the pickled Jalapeños
  • 10 tostadas, for serving

  • In a bowl, combine cow feet, vinegar, bay leaves, oregano, white onion, carrots, pickled Jalapeños chiles, and radish. Season with salt and pepper. Marinate in the fridge for 3 hours or overnight for a boost of flavor.
  • Spread refried beans on each tostada. Evenly mound the marinated cow feet and top with cabbage, queso fresco, radish, and green salsa. Serve authentic tostadas de pata on a wooden chopping board.
