Beef Barbacoa in Authentic Salsa Borracha

A traditional Mexican dish, barbacoa is prepared with sheep, goat, or beef steam cooked in an underground oven.   • 1 cup chickpeas, crude
  • 1 cup carrot, cut into cubes

  • For the salsa borracha: In a bowl, mix pasilla and árbol chiles. Pour in pulque and soak for about 30 minutes.
  • Transfer the pulque and chile mixture, roasted garlic, roasted onion, oregano, and salt to a blender and blend to a coarse purée.
  • Marinate meat with pulque sauce and soak for at least 30 minutes.
  • For the barbacoa: In a pressure cooker, place chickpeas, carrots, onion, garlic, and water. Insert the pressure cooker rack. Place agave leaves on a rack, cover with meat and pulque sauce, and layer agave leaves on top. Secure the lid of the pressure cooker and cook for 60 minutes once it comes to pressure.
  • Remove meat from the pressure cooker, cut it and serve the consommé.
  • Serve the barbacoa in tacos topped with cilantro, onion, and a squeeze of lime juice.
