  • In a pot with hot water cook beef, onion, garlic, bay leaves, and salt for about 2 hours or until soft. Shred beef using your hands. Reserve the beef broth.
  • For the tomato sauce: Combine tomato, garlic, chipotle chile, onion, and ½ cup of beef broth in a blender and blend until smooth.
  • For the beef tinga: Heat oil over medium heat. Add onion and fry until lightly transparent. Add tomato sauce, season with salt, and cook for 20 minutes.
  • Add shredded beef. Adjust seasoning and cook for 10 more minutes.
  • For assembling the tostadas: Spread a bed of beans on each tostada. Top with lettuce, beef tinga, and serve with tomato, sour cream, cheese, and salsa.
