Cheese-Stuffed Meatballs in Chipotle Sauce

  • 100 grams pork rinds, thin, for the meatballs
  • 1/2 kilos ground beef, for the meatballs
  • 2 eggs, for the meatballs
  • 1/3 cups white onion, finely chopped, for the meatballs
  • 2 tablespoons garlic, finely chopped, for the meatballs
  • 3 tablespoons fresh cilantro, finely chopped, for the meatballs

  • 1 tablespoon vegetable oil, for the chipotle sauce
  • 4 cloves garlic, for the chipotle sauce
  • 1 onion, cut into chunks, for the chipotle sauce
  • 8 tomatoes, cut into quarters, for the chipotle sauce
  • 3 chipotle chiles, dried, seeded, for the chipotle sauce
  • 1 teaspoon allspice berry, for the chipotle sauce
  • 1 pinch oregano, for the chipotle sauce
  • 1/8 bunches fresh cilantro, with roots
  • 1/4 cups beef broth, or chicken broth, for the chipotle sauce
  • 1 pinch salt
  • 1 tablespoon vegetable oil

  • For the meatballs: Crush pork rinds with a mortar and pestle. In a bowl, mix crushed pork rinds, ground beef, egg, onion, garlic, and cilantro. Season with salt and pepper.
  • Using your hands, form balls with previous mixture and stuff with asadero cheese cubes. Set aside.
  • For the chipotle sauce: In a deep skillet over medium heat, heat oil and fry garlic, onion, Roma tomatoes, and chipotle chile. Add pepper, oregano, cilantro, and beef broth. Cook for 10 minutes until reduced by half. Remove from heat and let cool.
  • Transfer previous preparation to a blender and blend until smooth. Season.
  • In a small pot over medium heat, heat oil and fry blended sauce. Add meatballs and cook until cooked through.
  • Serve cheesy meatballs in chipotle sauce on a soup plate garnished with finely chopped cilantro.
