Preparation
For the meatballs: Crush pork rinds with a mortar and pestle. In a bowl, mix crushed pork rinds, ground beef, egg, onion, garlic, and cilantro. Season with salt and pepper.
Using your hands, form balls with previous mixture and stuff with asadero cheese cubes. Set aside.
For the chipotle sauce: In a deep skillet over medium heat, heat oil and fry garlic, onion, Roma tomatoes, and chipotle chile. Add pepper, oregano, cilantro, and beef broth. Cook for 10 minutes until reduced by half. Remove from heat and let cool.
Transfer previous preparation to a blender and blend until smooth. Season.
In a small pot over medium heat, heat oil and fry blended sauce. Add meatballs and cook until cooked through.
Serve cheesy meatballs in chipotle sauce on a soup plate garnished with finely chopped cilantro.
