Dominican Pastelón

Pastelón de plátano maduro is a traditional dish from the Dominican Republic and now you get to make it at home! Served as a main or side dish, Dominican pastelón is prepared with tasty layers of ripe plantain paste, picadillo, and Gouda cheese. It’s time to dig into Dominican cuisine and there’s no better way to start than with a drool-worthy plantain lasagna.

  • 30 bananas, ripe
  • 500 grams Gouda cheese
  • 500 grams ground beef
  • 2 tomatoes
  • 1/4 onions
  • 2 tablespoons vegetable oil
  • salt

  • For the picadillo stuffing: On a chopping board, cut onion into small-sized cubes. In a skillet, fry onion until translucent.
  • Add ground beef and season.
  • On a chopping board, cut tomatoes into small-sized cubes. Transfer tomatoes to the skillet and cook until cooked through.
  • Set aside.
  • For the plantain paste: In a bowl, mash all the plantains until a smooth paste is obtained.
  • In a deep square baking dish, add about half of the plantain paste.
  • Top with a layer of Gouda cheese.
  • Add a layer of picadillo on top.
  • Top with remaining plantain paste.
  • Cover with a layer of shredded Gouda cheese.
  • Cover Dominican pastelón with aluminum foil and bake for 15 minutes or until cheese is golden brown. Serve Dominican pastelón.
