Fideo Pasta Soup with Beef Meatballs

Best known as sopa de fideo in Mexico, fideo pasta soup is one of the most classic Mexican dishes. Beloved equally by children and adults, Mexican noodle soup is one of those meals that complete any menu and this version with beef meatballs makes it more nutritious and healthier!

  • 1/2 kilos ground beef, for the meatballs
  • 1 tablespoon garlic powder, for the meatballs
  • 1 tablespoon onion powder, for the meatballs
  • 1 cup cilantro, finely chopped, for the meatballs
  • 1 1/2 cups bacon, fried and chopped, for the meatballs
  • 1 egg, for the meatballs
  • 1/2 cups breadcrumbs, for the meatballs
  • some vegetable oil, for the meatballs

  • 6 tomatoes
  • 1/2 cups tomato purée
  • 1/4 onions
  • 1 clove garlic
  • 2 cups beef broth

  • some vegetable oil, for frying the fideo pasta
  • 3 cups fideo pasta
  • some avocado, for garnish
  • some cilantro, for garnish
  • some serrano chile, for garnish

  • For the meatballs: Mix ground beef with garlic powder, onion powder, cilantro, bacon, egg, and breadcrumbs. Season with salt and pepper. In a skillet, over medium heat, heat vegetable oil. Sear meatballs for 5 minutes. Reserve.
  • For the soup: Combine tomatoes, tomato purée, onion, garlic, beef stock, and salt in a blender and blend until smooth. Reserve.
  • For the fideo pasta: Heat a pot over medium heat with plenty of oil. Add fideo pasta and brown for 5 minutes. If required, remove excess oil. Add blended tomato soup and cook for 10 minutes. Add meatballs and cook for about 10 more minutes until fideo pasta is soft and meatballs are cooked through. Adjust seasoning.
  • Garnish with avocado, cilantro, serrano chiles, and lime.
