  • In a skillet over medium heat, fry butter, onion, garlic, celery, and bacon for 8 minutes.
  • In a container, combine ground beef, cashews, parsley, breadcrumbs, bacon mixture, egg, salt, and pepper. Set aside.
  • Roll out puff pastry. Place meat mixture at the center, add prunes and Manchego cheese, and top with meat mixure. Shape into a roll and cut the corners of the dough diagonally as shown in the video. Seal with egg wash.
  • Roll out another portion of puff pastry. Cut strips for the branches and leaves with a knife, as shown in the video.
  • Brush roll with egg wash. Arrange branches and leaves.
  • Bake at 302 °F for 35 minutes. Let rest for 10 minutes. Cut and serve ground beef Wellington with mashed potatoes.
