Machaca con Huevos Breakfast Tacos

These Norteño style tacos made with machaca beef, eggs, and refried beans are truly delicious. Machaca beef is the Mexican equivalent of beef jerky and it's so tasty and easy to prepare that it will become one of your family's favorite recipes in no time!

  • 3 tablespoons vegetable oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons serrano chile, finely chopped
  • 1/2 cups tomato, cut into cubes
  • 1 cup dried meat, shredded
  • 6 eggs
  • salt
  • pepper
  • 2 tablespoons vegetable oil
  • 3 cuaresmeño chiles
  • 6 flour tortillas
  • 1 cup refried beans
  • some avocado, in slices, for garnish

  • In a skillet over medium heat, add oil, onion, garlic, serrano chile, tomato, and machaca beef. Cook for 5 minutes. Add the eggs and beat them slightly. Cook for 5 more minutes, stirring constantly. Season with salt and pepper.
  • In a skillet over medium heat, heat oil. Add chiles and blister them until golden brown on both sides. Remove from heat and reserve until ready.
  • In a griddle, warm the flour tortillas for 3 minutes.
  • Working one at a time, spread refried beans in a tortilla, add egg with machaca beef and avocado slices down the center.
