Poblano Chile Strips-Stuffed Beefsteak in Green Sauce

  • For the stuffing: Heat a skillet over medium heat with oil and fry onion, mushrooms, requesón, corn kernels, and epazote. Add Poblano chile strips. Season with salt and pepper. Reserve.
  • For the stuffed beefsteaks: Place beefsteak on a chopping board. Stuff with Poblano chile strips. Fold and cook over high heat on a grill until meat is cooked through.
  • For the sauce, heat a pot over high heat with chicken broth. Boil tomatoes with garlic, onion, serrano chile, epazote, cumin, and oregano for 30 minutes. Transfer all ingredients to a blender, add cilantro, season with a bit of salt, and blend until smooth.
  • Spoon green sauce over a plate. Serve Poblano chile strips-stuffed beefsteaks over green sauce. Garnish with red onion, cilantro, and yellow corn kernels.
