Suadero Gorditas

  • 500 grams rose meat
  • 2 cups water
  • 1 cup evaporated milk
  • 1 orange, cut in half
  • 1 teaspoon allspice berry
  • 1/2 cups cilantro
  • 1 teaspoon clove
  • 1 cup onion, cut into quarters
  • 5 garlic
  • 2 leaves bay
  • 2 tablespoons coarse salt
  • 2 tablespoons vegetable oil
  • 500 grams masa dough
  • 1 tablespoon lard
  • 1 teaspoon salt
  • some water
  • 1 tablespoon lard, for frying the rose meat
  • some onion, finely chopped
  • some cilantro, finely chopped
  • red salsa
  • lime

  • For the suadero: In a pot, place rose meat, water, evaporated milk, orange, allspice berries, cilantro, clove, onion, garlic, bay leaf, and coarse salt. Cover and cook for 2 hours. If needed, add more water to keep the rose meat hydrated.
  • Once rose meat is tender, remove from heat. Let cool slightly and finely chop rose meat.
  • In a skillet over medium heat, heat oil and fry rose meat for 10 minutes or until golden brown.
  • In a bowl, mix masa dough, lard, salt, and water until soft.
  • Form masa dough balls with your hands and flatten a little to form the gorditas.
  • In a skillet, heat one tablespoon of lard and fry gorditas for about 5 minutes on each side.
  • Split gorditas open along the side with a serrated knife without cutting all the way through. Stuff gorditas with rose meat, onion, and cilantro. Serve suadero gorditas with red salsa and limes.
