  • Preheat the oven to 356 °F.
  • For the hibiscus sauce: In a pot, heat water and add hibiscus flower. Add morita chile and onion and cook until hibiscus flower softens and releases its flavor.
  • In a small pot over medium heat, heat butter and cook shallots, rosemary, and thyme. Strain previous preparation and pour it back into the pot. Add red wine and sugar and reduce until thick. Season with salt and pepper and set aside.
  • For the rub: In a bowl, combine pepper, rosemary, thyme, pink pepper, and coarse salt and crush to a powder. Add olive oil and mix.
  • On a chopping board, truss tenderloin. Rub previous mixture evenly on the tenderloin.
  • Place tenderloin in a baking dish and wrap with aluminum foil. Bake for 20 minutes. Remove tenderloin and place on a chopping board. Using a knife, cut into 3-finger-thick slices. Set aside.
  • Serve tenderloin with hibiscus sauce with salad and mashed potatoes on the side.
